Vermicelli Upma.....

INGREDIENTS:

  • Vermicelli-1 cup.
  • Onion-1(finely chopped).
  • Ginger-1 inch(finely chopped).
  • Green chili-2.
  • Carrot-1/2.
  • Beans-2.
  • Cauliflower floret-1.
  • Coriander leaves-few.
  • Tomato-1.
  • Green peas-8-10.
  • Salt to taste.
For the seasoning:
  • Mustard seeds-1/2 tsp.
  • Chana dal(Bengal gram)-1/2 tsp.
  • Skinless Urad dal-1/2 tsp.
  • Curry leaves-little.
  • Refined oil-1 tbsp.

Method:

  • Roast Vermicelli in oil till golden brown & keep aside.
  • Chop all the vegetables & sliced the green chili & keep aside.
  • Heat 1 tbsp of refined oil,add mustard seeds when it splutters,add chana dal+urad dal+curry leaves,saute it.
  • Then add chopped onion,Saute till it become transparent,add ginger+green chili+tomato & saute a little.Add all the vegetables & cook for few more minutes(don't overcook).
  • Add 2 cups of water+salt & bring it to boil,when water boil,add roasted vermicelli & cook till vermicelli is done,lastly add chopped coriander leaves & mix it.
  • "Vermicelli upma" is ready to serve.

Aloo matar chaat/ଓଡ଼ିଶା ଚlଟ.....

Today my blog celebrating ChristmasChristmas Banana animated emoticon  with odisha's very own delicious & all's favorite chattapata "ALOO MATAR CHAAT"

 so,here we go....

INGREDIENTS:

  • Potato-2-3.
  • Yellow peas-1 cup.*Soak overnight/4-5 hr.
  • Mixed paste-(Green chili-1,Garlic-6-7 pods,Tomato-1).
  • Cumin powder-1/2 tsp.
  • Coriander powder-1/2 tsp.
  • Red chili powder-1/4 tsp.
  • Turmeric powder-1/4 tsp.
  • Pinch of hing.
  • Refined oil-2 tbsp.
  • Salt to taste.
For garnishing:
  • Grated cucumber-1/2 cup.
  • Grated carrot-1/2 cup.
  • Chopped onion-1 cup.
  • Thin sev -1 cup.
  • Curd-1/2 cup.
  • Tamarind chutney-1/2 cup.

  • Some chopped coriander leaves.
  • Some papdi.   *Click this for papdi recipe
  • Some tomato ketchup.
  • Dahi vada-1.(optional)    *Click this for dahi vada recipe
  • Roasted cumin powder-1/2 tsp.
  • Roasted red chili powder-1/2 tsp.
  • Some black salt.
  • Some chaat masala.

Method:

  • Soak some dry peas 4-5 hour & cut the potato into halves.Take a pressure cooker,add the soaked peas,potato & salt,pressure cook it for 1-2 whistle,make sure that it is soft,then remove it from pressure cooker,remove the outer skin of potato & mash it & mix it with boiled peas.
                            *Don't make the potatoes fully mashed....just crumbled it.
  • Heat oil in a pan,add hing,then add the mixed paste,saute it little,add coriander+cumin +turmeric+red chili powder,stir it 1-2 min,then add boiled peas,mashed potato & salt,mix it well ,then add 1/2 cup of water.boil it 4-5 min.switch off the flame.
                           *Don't make it too dry...make sure that potato mixture should be little bit watery...

Assembling the chaat:
  • Take a serving plate,place the matar chaat,sprinkle some black salt, 1 tbsp tamarind chutney, 1 tbsp green chutney,1 tbsp curd,some grated cucumber,some grated carrot,some chopped onion,1 tsp tomato ketchup,sev,mashed papdi,one dahi vada,black salt,1 tsp chaat masala,coriander leaves,some roasted cumin & red chili powder.
  • Super delicious finger licking"ALOO MATAR CHAAT" is ready to serve...enjoy.

Aloo Bonda/Aloo chop(ଆଳୁ ଚପ୍).....

Today i m posting my all time favorite Yummy snacks aloo chop....This is a very common & most preferable snack in odisha....
In Chennai, we can get aloo banda but the stuffing of aloo is very less amount....Its taste also totally different not like odisha....so i really missed this...So, i have decided to make it in my home like odisha chop....the outcome was also very good...Smiley
so lets go to the recipe....

INGREDIENTS:


For the batter(outer layer of aloo chop):
  • Besan/gram flour- 1 cup.
  • Red chili powder- 1/2 tsp.
  • Turmeric powder-1/2 tsp.
  • Eno fruit salt-1/2 tsp.
  • Salt to taste.
  • Oil for deep frying.
For the stuffing:
  • Medium size Potato-3-4.
  • Dry peas-a handful.(optional)
  • Roasted peanut-2 tbsp. *remove the outer skin.
  • Onion-1(Chopped).
  • Ginger-garlic crushed-1 tbsp each. * u can also take gg paste instead of crushed gg.
  • Green chili-1 (chopped).
  • Coriander leaves-2 tbsp.
  • Kasturi methi-1 tsp.
  • Cumin seeds-1 tsp.
  • Refined oil-2 tbsp.
  • Salt to taste.

Method:

  • Soak some dry peas 3- 4 hour & cut the potato into halves.Take a pressure cooker,add the soaked peas,potato & salt,pressure cook it for 1-2 whistle,make sure that it is soft,then remove it from pressure cooker,remove the outer skin of potato & mash it & mix it with boiled peas.
  • Heat oil in a pan,add cumin seed,let it splutter,add chopped onion,saute it for 1 min,then add crushed ginger & garlic,green chili.
  • Then add turmeric powder,mashed potato,kasturi methi & roasted peanut,mix it well & fry it for 2 min.Lastly add some coriander leaves,mix it & fry it for another 1 min.Stuff is ready,lei it cool.
  • In meantime,let prepare the batter.Take a bowl,add gram flour,chili powder,turmeric powder,eno & salt,mix it well,then add water little by little & make it a thick batter without any lumps.
  • Make sure the batter should be medium thickness consistency,so that it can be coated over the potato dumpling.
  • Now,divide the masala(for stuffing),make it small lemon size ball & keep aside.
  • Heat sufficient oil in a deep bottom pan,dip potato dumpling in the batter & drop carefully into the hot oil & deep fry it until it turns golden brown,drain it from oil & spread it on tissue paper to soak the excess oil. 
  • Delicious "ALOO CHOP" is ready to serve.Serve hot with tomato ketchup/chutney..
