Semiya Payas/Vermicelli kheer...

Its a common sweet dish in all odia family...it specially prepared in puja/brata...

INGREDIENTS:

  • Semiya/vermicelli-1/2 cup.

  • Sugar-1/2 cup.

  • Milk-2 cup.

  • Ghee/refined oil-2 tsp.

  • Bay leaf-1.

  • Cashew nuts-7-8.

  • Raisins-6-7.

  • Cardamom-1.

  • Almond-1.

    (for garnishing)

PREPARATION:

Vermicelli kheer/Semiya payas

  • Heat 1 tbsp oil in a pan,fry the cashew & raisins till golden yellow in color & keep aside.in the same pan add rest oil,fry vermicelli in medium flame in constant stirring till vermicelli  turns golden brown in color & keep aside.
  • Boil milk+1/2 cup water in the same pan 2-3 min,add roasted vermicelli,bay leaf,sugar in it,cook 4-5 min.add roasted cashew,raisins & crushed cardamom powder,boil 1 min.switch off the flame.cool it down.
  • "Semiya payas/Vermicelli kheer" is ready to serve.

Banana smoothie....


This has to be one of my favorite recipes because it can be made in a flash, yet it's full of flavor. I think the honey/sugar adds just the right amount of sweetness. Everyone will love it...not just banana lovers!

*Serves-2 person.


INGREDIENTS:

  • Curd/Yogurt-1+1/2 glass.
  • Ripe banana-2(medium size).
  • Honey/sugar-2 tsp.
  • Ice cubes-5.
  • Bourn vita powder-2 tsp.(for garnishing)
  • Banana slices-2.(for garnishing)

PREPARATION:

Banana smoothie....

  • Put all the ingredients in a blender,blend until froth appears,Pour the blended smoothie to serving glass,garnish with bournvita powder.

     Adjust the sweetness as per your taste.

  • "Banana smoothie" is ready to serve...enjoy..

Sarson bali bhindi(Okra\ladies finger in mustard gravy)..

Okra is popular throughout India. One of the main reason for its popularity is the ease of cooking. Anybody with basic level of cooking expertise can make a tasty dish out of Okra. 

INGREDIENTS:

  • Bhendi/okra/ladies finger-15-20.

  • Mixed paste (1-onion.8-garlic cloves,1 tsp mustard seeds,4-red chili )-3 tsp.
  • Turmeric powder-1 tsp.
  • Sliced tomato-2.
  • Cumin seed-1/4 tsp.
  • Sliced green chili-2.
  • Mustard oil-4-5 tsp.
  • Salt to taste.

PREPARATION:


  • Wash & clean the bhendi,cut it into big size pieces.Heat 2 tbsp oil in a pan,fry the bhendi to avoid stickiness without changing its beautiful green color & keep aside...
  • Add 3 tsp Mustard oil in a pan,add cumin seed.When it start spluttering ,add mixed paste,turmeric powder,salt stir for 40 sec.
  • Then add fried bhindi,sliced tomato,sliced green chili,stir it,then add 1/2 cup water.
  • Cover it with a lid & allow it to boil 5-10 min in low flame.
  • Open the lid,fry till water evaporated,don't make it too dry.
  • "Sarson bali bhindi" is ready to serve.Serve hot with steamed rice/roti.Smiley

Sweet Lassi(ଲସି)...

Lassi is a traditional Indian beverage, originally from Punjab, made by blending yogurt..lassi is another cooling and refreshing drink to have in the summers.Now days i make lassi often at home. Lassis are enjoyed chilled as a hot-weather refreshment...

*Serves-2 person.


INGREDIENTS:

  • Curd/Yogurt-1+1/2 glass.
  • Sugar-2 tsp.
  • Rose water-1-2 drop.
  • Ice cubes-5.
  • Broken cashew-4-5.
  • Grated coconut-2 tsp.(for garnishing)
  • Pistaches-2.(for garnishing)
  • Bourn vita powder-2 tsp.(for garnishing)

PREPARATION:

Sweet Lassi

  • Put all the ingredients in a blender,blend until froth appears,Pour the blended lassi to serving glass,garnish with grated coconut,bournvita powder,broken cashew,pistaches & cherry.

    Adjust the sweetness as per your taste.

  • "ଲସି" is ready to serve...enjoy...Smiley

Chatu Besara/ଛତୁ ବେସର(Mushroom in mustard paste)...

Besara is an authentic Odiya dish prepare with mustard paste....

INGREDIENTS:

  • Mushroom-200 gm.
  • Mixed paste (1-onion.8-garlic cloves,1 tbsp mustard seeds,4-red chili )-3 tbsp.
  • Turmeric powder-1 tsp.
  • Dried mango slices(ambula)-1.
  • Sliced tomato-2.
  • Sliced green chili-2.
  • Mustard oil-4-5 tsp.
  • Salt to taste.

PREPARATION:

Mushroom in mustard paste

  • Clean the mushroom,then cut into small pieces.Soak the mushroom with some water & turmeric powder for 5-10 min,this will remove the unwanted impurities from mushroom.
  • Heat the pan,add 1 tsp mustard oil,squeeze the mushroom from water & fry in the pan,fry till it becomes golden brown in color & keep aside.
  • Add 3 tsp Mustard oil in a pan,add cumin seed.When it start spluttering ,add mixed paste,turmeric powder,salt stir for 1 min.
  • Then add fried mushroom,sliced tomato,dried mango slices,sliced green chili,stir it,then add 1/2 cup water.
  • Cover it with a lid & allow it to boil 5-10 min in low flame.
  • Open the lid,fry till water evaporated,don't make it too dry.
  • "ଛତୁ ବେସର" is ready to serve.Serve hot with steamed rice/roti.Smiley
