Palak pakoda(ପlଳଙ୍ଗ ପକୁଡ଼ି)...

Palak(spinach) is one of the favourite leafy vegetables in every indian households. They use the versatile palak in a variety of preparations such as raita, gravy,pakoda,soup....

INGREDIENTS:


  • Finely Chopped palak-1 cup.
  • Gram flour(besan)-1 cup.
  • Chopped green chili-2(optional).
  • Chopped coriander leaves-1 tsp.
  • Chopped curry leaves-5-10 leaf.
  • Chopped onion-1(optional).

  • Chaat masala-1 tsp(optional).

  • Roasted Cumin powder-1 tsp.
  • Roasted red chili powder-1 tsp.
  • Cumin seeds-1/2 tsp.
  • Eno fruit salt-1/2 tsp.
  • Oil for deep fry.
  • Salt to taste.

PREPARATION:

                              Palak pakoda

  • Take a bowl,add gram flour,chopped palak,Chopped coriander leaves,Chopped curry leaves

    ,red chili powder,cumin powder,cumin seeds,Chopped green chili,salt & eno with water.mix well to avoid lumps & make a batter is thick enough.

  • Heat sufficient oil in a pan for deep fry,drop small clumps of batter into the oil,fry the pakodas till they become golden brown in color all around.

  • Drain & place them on an absorbent paper/tissue paper.

    Sprinkle some chaat masala over it.

  •  "Palak pakoda"is ready to serve.Serve hot with tomato ketchup.

Palak(Spinach)(ପlଳଙ୍ଗ ପରଟା) paratha.....

Spinach Paratha is an Indian unleavened bread made from whole wheat flour and spinach.I had some left over palak after I made palak curry,it was too little to make palak paneer or anything else.So ended up in making palak paratha. Had it with onion tomato chutney/curd/pickle,the best combo I would say!

INGREDIENTS:

  • Wheat flour(atta)-1 cup.
  • Palak(spinach)(washed & chopped)-1 cup.
  • Cumin seeds-1 tsp.
  • Roasted Red chili powder-1 tsp.
  • Oil-2 tsp for seasoning+oil for frying parathas.
  • Salt to taste.
  • Water as needed.

PREPARATION:


  • Wash the spinach & tear the thick stem in the leaf & chop them roughly.

  • Heat oil in a pan,add cumin seeds,when it start spluttering,add chopped spinach,fry few min in low flame without changing its beautiful green color & keep aside.

  • Take a bowl,add wheat flour,cooked palak,red chili powder,salt & needed water & make a soft dough,the dough should not be sticky.

  • Divide the prepared dough equally & make ball out of it & then roll out little thicker parathas,dust it while rolling,whenever necessary.

  • Heat a pan,put the roll out parathas on it,when bubbles appear,spread oil on it,flip it over to the other side,spread oil again,cook the paratha in medium flame, until the golden brown spot appears.

  • "Palak paratha" is ready to serve..Serve hot with onion tomato chutney...

Hariyali chicken-chicken in spinch(palak) gravy...

Chicken with palak & coriander paste gives a unique taste....its a very delicious chicken curry made with palak..Hariyali chicken is most popular & delicious dish in north Indian cuisine...

INGREDIENTS:

  • Chicken-500gm.
  • Palak(spinach)-1 bunch.
  • Chopped onion-3 medium sized.
  • Chopped Garlic cloves-12.
  • Chopped Green chili-6 or more(to taste).
  • Finely chopped coriander leaves-2 tsp.
  • Cinamon-1 stick.
  • Bay leaves-1.
  • Curd-1/2 cup.
  • Refined oil-5 tsp.

PREPARATION:


  • Boil the palak in a vessel till it soft & keep aside.
  • Heat 2 tsp oil in pan,add bay leaves,cinnamon stir it 1 min,add chopped onion,fry it till it turns golden brown in color.
  • Add chopped garlic,green chili & coriander leaves.then add palak to this mixture,fry this mixture 2 min,switch off the flame,let it cool.
  • Grind this mixture to make it paste.
  • Again heat 3 tsp oil in the same pan,add the paste,add curd,stir it till the raw smell of mixed paste go or the oil leaving the sides of the pan.
  • Add chicken & salt,cook on medium heat till the chicken is done.
  • Serve hot with Steamed rice/roti..Puppy dog eyes.

Spinach Curry(ପlଳଙ୍ଗ ଶାଗ ତରକାରୀ)....


This recipe is very good,easy & nutritious....This is a typical odia recipe.Try it in home...I m sure,u will definitely love it... :)Cool

INGREDIENTS:

  • Finely Chopped palak-1 cup.
  • Potato-2 medium size(wash,peel & cut into cube shape).
  • Brinjal-1(cut into cube shape).
  • French beans-1/2 cup.
  • White radish-1.
  • Vadi-2-3
  • Green peas(optional).
  • Mixed paste(1-onion,8-garlic cloves,1 piece of ginger,some cumin seeds,3-red chili)-2 tsp.
  • Phutana(cumin seed+mustard seed+fenugreek seed)-1/2 tsp.
  • Some chopped coriander leaves.
  • Turmeric powder-1 tsp.
  • Mustard oil-5-6 tsp.
  • Salt to taste.

PREPARATION:

  • Heat the pan,add 2 tsp mustard oil,fry the potato,brinjal,french beans,white radish,green peas(optional) till golden brown & keep aside.
  • Again add 1 tsp mustard oil in pan,add phul vadi,fry it till golden brown & keep aside.
  • Add  3 tsp mustard oil,then add phutana. When it start spluttering ,add 2 tsp mixed paste,turmeric powder,salt stir for 1 min.
  • Then add fried potato,brinjal,french beans,white radish,green peas,sliced green chili,stir until the raw smell of mixed masala go.
  • Add 1 cup of water,let the gravy boil for 5-10 min.
  • Add chopped palak(spinach),phul vadi in this gravy,boiled it for 3 min.Garnish it with coriander leaves.
  • "Spinach curry"(palang saag tarkari)is ready to serve.Serve it with steamed rice

Palak/Spinach soup....


INGREDIENTS:

  • Finely Chopped palak-1 cup.
  • Finely Chopped onion-1.
  • Chopped garlic-5/6 cloves.
  • Finely Chopped green chili-1.
  • Cornflour-1+1/2 tsp.
  • Pepper powder-2 tsp.(as per your choice)
  • Butter-1 tsp.
  • Sugar-1/4 tsp.
  • Salt to taste.

PREPARATION:


  • Heat the pan,add 1 tsp butter,when it melts,fry the chopped onion till golden brown,add garlic+chopped green chili stir for 1/2 min,then add chopped spinach,fry for 2 min.
  • Take 1 cup of water,add 1+1/2 tsp cornflour mix well to avoid lumps,add it to spinach mixture.Loser
  • Add salt,sugar,pepper powder,stirring continuously.When it thicken to desired consistency,take off from heat.
                       *you can also add fresh cream for better taste(its optional).
  • Serve hot.u can also add more salt & pepper powder as per your taste.

Moong palak dal(Spinach with mung)


INGREDIENTS:

  • Moong dal-1 cup .
  • Chopped spinach(palak)-3 cup.
  • Chopped coriander leaves-1/2 cup.
  • Cumin seed-1 tsp.
  • Turmeric powder-1/2 tsp.
  • Red chilies-2.
  • Salt to taste.
  • Refined oil-1 tsp.

PREPARATION:

  • Wash the moong dal,Pour it into a pressure cooker,add turmeric powder,salt,3 cup water.Close the pressure cooker,Wait till 1 whistle.
  • After 1 whistle,switch off the flame,open the pressure cooker,add chopped spinach & coriander leaves into it,stir it.
  • Heat a pan,add some refined oil,add red chilies & cumin seeds,when it starts spluttering,add the dal,stir it,let the dal boil for 5 min(if required add some hot water).
  • Then serve hot with rice.
