Cauliflower & potato curry(ଫୁଲକୋବି ତରକାରୀ)......


INGREDIENTS:

  • Chopped cauliflower-1.
  • Potato-2 medium size(wash,peel & cut into cube shape).
  • Mixed paste(1-onion,8-garlic cloves,1 piece of ginger,some cumin seeds,3-red chili)-3 tbsp.
  • Chopped Tomato-2(medium size).
  • Red chili powder-1 tsp.
  • Coriander powder-1 tsp.
  • Sugar-1/6 tsp.
  • 4-5 tsp refine oil.
  • 1/2 tsp garam masala.
  • Salt to taste.
For the seasoning:
  • Phutana(cumin seed+mustard seed+fenugreek seed)-1/2 tsp.
For garnishing:
  • Some chopped coriander leaves.
  • Fresh cream(optional).

PREPARATION:

Cauliflower & potato curry
  • Heat the pan,add 2 tsp refine oil,fry the cauliflower till golden brown & keep aside.
  • Add 3 tsp refine oil in pan,add sugar,add cumin seed.
  • When it start spluttering ,add mixed paste,saute it 2 min,add chopped tomato,red chili powder,turmeric powder,salt stir it till the oil appears in the masala & raw smell of mixed paste go.
  • Then add potato cubes,add 1 cup of water,let the gravy boil for 5-10 min.
  • Add fried cauliflower floret in this gravy,boiled it for 3 min & sprinkle some garam masala over it.
  • Garnish it with coriander leaves.
  • "Cauliflower & potato curry" is ready to serveSmiley .Serve it with steamed rice/roti.

Egg Sundal(south Indian recipe)....


INGREDIENTS:

  • Yellow peas-1 cup.
  • Boiled egg-2.
  • Chopped onion-2.
  • Tomato-2.
  • Bunch of finely chopped curry leaves.
  • Chopped coriander leaves for garnishing.
  • Red chili powder-2 tsp.
  • Pepper powder-1 tsp.
  • Jeera(cumin seed) powder-1 tsp.
  • Coriander powder-1 tsp.
  • Oil-3-4 tsp.
  • Garam masala powder-1/2 tsp.
  • Salt to taste.

PREPARATION:


  • Pressure cook the peas & keep aside.
  • Cut each boiled egg into 4 pieces.
  • Heat oil in a pan,add chopped onion,fry till golden brown,add tomato,chopped curry leaves.
  • When tomato get mashed,add red chili powder,pepper powder,cumin powder,coriander powder stir for 3 min.
  • Then add peas & water,mix well.
  • Put it in slow flame till the mixture boil.The mixture should not thicken so much,it should be little watery.
  • "Egg sundal" is ready to serve.Serve it hot Smiley with chopped onion,coriander leaves,small papad & boiled egg.

Fish fry....


INGREDIENTS:

  • Fish(thick slices with skin)-5-6 pieces.
  • Mixed masala(1-onion,8-garlic cloves,1 piece of ginger,some cumin seeds,3-red chili).
  • Chopped Tomato-2.
  • Green chilies-2(vertically sliced).
  • 1 spoon red chili powder.
  • Sugar-1/6 tsp
  • Some chopped coriander leaves.
  • Phutana(cumin seed+mustard seed+fenugreek seed)-1/2 tsp.
  • 5-10 tsp refine oil.
  • Turmeric powder-1 tsp.
  • 1/2 tsp garam masala.
  • Salt to taste.

PREPARATION:

  • Clean well the fish pieces & marinate with salt & turmeric powder,keep aside 10-12 min.
  • Heat a pan,add marinated fish pieces as many as fit comfortably in pan.fry over high heat till the fish pieces turns golden brown.Remove fish from oil & keep aside.
  • Add 3 tsp refine oil in the same pan again,add sugar,add cumin seed.
  • When it start spluttering ,add mixed masala,red chili powder,turmeric powder,salt stir for 1 min.
  • Then add tomato slices,sliced green chili,stir until the raw smell of mixed masala go.
  • Add 1/2 cup of water,let the gravy boil for 5-10 min.
  • Add fried fish in this gravy,boiled it for 3 min & add some coriander leaves over it & mix well.
  • Fish fry is ready to serve.

Pakhala(ପଖାଳ) bhata(Water rice)...

Pakhala"ପଖାଳ" is a most popular traditional odia dish...Eating pakhal,really gives u a comfort from scorching sun
 & also recommended to prevent heat stroke in hot weather......so,here i gives u a delicious pakhala bhata recipe...

INGREDIENTS:

  • Rice-1 cup.
  • Curd-1/2 cup.
  • Mustard seeds-1 tsp.
  • Refined oil-1/2 tsp.
  • Finely chopped ginger-1/2 tsp.
  • Bunch of Curry leaves.
  • Vertically sliced green chili-2.
  • Chilled water/Ice cubes-5-6(optional).
  • Salt to taste.

PREPARATION:


  • First cook the rice,add some water,leave it for 3-4 hours or whole night(If u want to prepare instantly then after cook the rice,add some chill water).
  • Heat oil in a pan,add mustard seeds,let it crackle,add chopped ginger,curry leaves,sliced green chili.
  • Then add water rice(pakhala) into it,switch off the flame,then add curd,salt into it,stir well.
  • Let it cool before u eat or u can add ice cube/chilled water into it.
  • Odisha famous pakhal(ପଖାଳ) is ready to serve.Drooling
  • Serve it with fried fish/fish fry,mixed pickle,brinjal+tomato bhartta,aloo bhartta,badhi chura,drumstick potato fry,bhaja,sagga bhaja,egg omelette.chicken kassa.

Ladies finger fry(Bhendi bhaja)


INGREDIENTS:

  • Ladies finger(bhendi)-200 gm(wash & cut into small pieces).
  • Potato-2 medium size(wash,peel & cut into rectangular shape).
  • Phutana(cumin seed+mustard seed+fenugreek seed)-1/2 tsp.
  • Chopped Onion-1.
  • Red chili-2.
  • Turmeric powder-1/2 tsp.
  • Salt to taste.
  • Mustard oil-3-4 tsp.

PREPARATION:

  • Heat oil in a pan,add  red chilies,add phutana,let it crackle,add chopped onion,chopped ladies finger,chopped potato,turmeric powder,salt mix well & cover the lid for 4-5 min.
  • Remove the lid,stir it 3-4 min in low flame till it become soft & light brown.
  • Switch off the flame,hot bhendi bhaja is ready to serve.serve it with roti or rice & dal.

Egg curry(anda tarkari)


INGREDIENTS:

  • Boiled egg-4.
  • Boiled Potato-2 medium size.
  • Mixed masala(1-onion,8-garlic cloves,1 piece of ginger,some cumin seeds,3-red chili).
  • Tomato pure-(2-medium size tomato).
  • 1 spoon red chili powder.
  • Sugar-1/6 tsp
  • Some chopped coriander leaves.
  • 4-5 tsp refine oil.
  • 1/2 tsp garam masala.
  • Salt to taste.

PREPARATION:

  • Remove the shell of boiled egg & keep aside.
  • Heat the pan,add 2 tsp refine oil,fry the egg till golden brown & keep aside.
  • Add 3 tsp refine oil in pan,add sugar,add cumin seed.
  • When it start spluttering ,add mixed masala,red chili powder,turmeric powder,salt stir for 1 min.
  • Then add tomato puree,boiled potato stir until the raw smell of mixed masala go.
  • Add 1 cup of water,let the gravy boil for 5-10 min.
  • Add fried egg in this gravy,boiled it for 3 min & sprinkle some garam masala over it.
  • Garnish it with coriander leaves.
  • "Egg curry" is ready to serve.enjoy....

Pakudi tarkari(Pakodi curry)


INGREDIENTS:

For pakodi:
  • Besan(Gram flour)-1 cup.
  • Roasted chili powder-1/2 tsp. 
  • Cumin seeds-1/2 tsp.
  • Eno fruit salt-1/2 tsp.
  • Salt to taste.
  • Water.
  • Oil for frying.
For curry:
  • Mixed masala(1-onion,8-garlic cloves,1 piece of ginger,some cumin seeds,3-red chili).
  • Tomato pure-(2-medium size tomato).
  • 1 spoon red chili powder.
  • Some chopped coriander leaves.
  • 4-5 tsp refine oil.
  • 1/2 tsp garam masala.
  • Salt to taste.

PREPARATION:

  • Take a bowl,add all the ingredients for pakodi with water to make a smooth batter,mix well to avoid  lumps.
  • For fry,heat a pan with sufficient oil in medium flame,when the right temperature is reached,drop small amount of batter to the oil by using finger/small spoon.Fry till golden brown in color,keep aside.
  • Heat another pan,add some oil,add cumin seeds,when it starts spluttering,add mixed masala,red chili powder,turmeric powder,salt stir for 1 min.
  • Then add tomato puree,stir until the raw smell of mixed masala go.
  • Add 1 cup of water,let the gravy boil for 5-10 min.
  • Add fried Pokadi in this gravy,boiled it for 3 min & sprinkle some garam masala over it.
  • Garnish it with coriander leaves.
  • Pakudi tarkari  is ready to serve.

Drumstick potato fry(Sajana Chuin Aalu besara Bhaja)


INGREDIENTS:

  • Drumstick(sajana chuin)-5.
  • Potato(aalu)-2 medium size.
  • Mixed masala (1-onion.8-garlic cloves,1 tbsp mustard seeds,3-red chili ).
  • Phutana(cumin seed+mustard seed+fenugreek seed)-1/2 tsp.
  • Turmeric powder-1/2 tsp.
  • Salt to taste.
  • Mustard oil-3-4 tsp.

PREPARATION:

Drumstick potato fry
  • Wash & peel off the out-layer of drumstick &  potato,cut drumstick into lengthwise pieces & potato into small round-wise pieces.Doh
  • Heat oil in a pan,add phutana,when it starts spluttering,add mixed masala,washed drumstick & potato,turmeric powder,salt stir it,then add 1/2 cup water.
  • Cover it with a lid & allow it to boil 5-10 min in low flame.
  • Open the lid,fry till water evaporated(add oil if required).
  • "Drumstick potato fry" is ready to serve.Serve hot with rice/pakhala.

Moong palak dal(Spinach with mung)


INGREDIENTS:

  • Moong dal-1 cup .
  • Chopped spinach(palak)-3 cup.
  • Chopped coriander leaves-1/2 cup.
  • Cumin seed-1 tsp.
  • Turmeric powder-1/2 tsp.
  • Red chilies-2.
  • Salt to taste.
  • Refined oil-1 tsp.

PREPARATION:

  • Wash the moong dal,Pour it into a pressure cooker,add turmeric powder,salt,3 cup water.Close the pressure cooker,Wait till 1 whistle.
  • After 1 whistle,switch off the flame,open the pressure cooker,add chopped spinach & coriander leaves into it,stir it.
  • Heat a pan,add some refined oil,add red chilies & cumin seeds,when it starts spluttering,add the dal,stir it,let the dal boil for 5 min(if required add some hot water).
  • Then serve hot with rice.

Vegetable idli


INGREDIENTS:

  • Skinless urad dal-1/2 cup.
  • Rice-1 cup.
  • Grated carrot-1 medium size.
  • Chopped beans-4 to 5.
  • Grated cabbage or cauliflower-1/4 cup.
  • Chopped coriander leaves-2 tsp.
  • Green peas-3 to 4(optional).
  • Black pepper powder-1 tsp.
  • Eno fruit salt-1 tsp.
  • Salt to taste.
  • Refined Oil- 2 tsp.

PREPARATION:

Vegetable idli

  • Wash & soak the urad dal & rice separately 3-4 hours.Drain & mix it & grind it to make fine paste using very little water(in-case you find that batter is thin ,then you can add sooji to make it thick ).Leave this batter 4-5 hr or overnight for fermentation.
  • Add all the vegetables,coriander leaves,black pepper powder,salt,eno into the batter & mix well.
  • Grease the idli moulds with refined oil.Pour the spoonful of batter into each moulds.
  • Place the idli moulds into the steamer by adding some water in steamer.steam this mixture 10-12 min or till done.Insert a knife,if it come out clean then it done.Keep it 5 min to cool down.
  • "Vegetable idli" is ready to serve......Serve hot with coconut chutney. :)
