Mushroom Manchurian.......

INGREDIENTS:

  • Button mushroom-200 gm/1 packet.
  • Cornflour-5 tbsp.
  • Ginger-garlic paste-1/2 tsp.
  • Green chili paste-1/2 tsp.
  • Baking powder-1/2 tsp.
  • Ajinomoto- a pinch.
  • Oil-for deep frying.
  • Salt to taste.
For the sauce:
  • Ginger-garlic paste-2 tsp.
  • Green chili paste-1 tsp.
  • Oil-1 tsp.
  • Soya sauce-2 tbsp.
  • Red chili sauce-2 tbsp.
  • Tomato sauce-2 tbsp.
  • Vinegar-1 tbsp.
  • Chopped spring onion-1/2 cup.
  • Ajinomoto- A pinch.
  • Cornflour-1 tbsp.

Method:

  • Make a batter with cornflour,ginger-garlic paste,green chili paste,salt & little water.Dip the mushroom in this batter & deep fry in hot oil.
For the sauce:
  • Heat oil,add ginger-garlic & green chili paste & fry for 2 minutes.Add 1/2 cup water & bring to boil.Add cornflour dissolved in water.
  • Add the sauces,salt,ajinomoto & mix well.Add the fried mushroom & cook till sauce just coats the mushrooms.
  • "Mushroom Manchurian" is ready to serve.Serve hot & garnish with chopped spring onions.

Chatu Besara/ଛତୁ ବେସର(Mushroom in mustard paste)...

Besara is an authentic Odiya dish prepare with mustard paste....

INGREDIENTS:

  • Mushroom-200 gm.
  • Mixed paste (1-onion.8-garlic cloves,1 tbsp mustard seeds,4-red chili )-3 tbsp.
  • Turmeric powder-1 tsp.
  • Dried mango slices(ambula)-1.
  • Sliced tomato-2.
  • Sliced green chili-2.
  • Mustard oil-4-5 tsp.
  • Salt to taste.

PREPARATION:

Mushroom in mustard paste

  • Clean the mushroom,then cut into small pieces.Soak the mushroom with some water & turmeric powder for 5-10 min,this will remove the unwanted impurities from mushroom.
  • Heat the pan,add 1 tsp mustard oil,squeeze the mushroom from water & fry in the pan,fry till it becomes golden brown in color & keep aside.
  • Add 3 tsp Mustard oil in a pan,add cumin seed.When it start spluttering ,add mixed paste,turmeric powder,salt stir for 1 min.
  • Then add fried mushroom,sliced tomato,dried mango slices,sliced green chili,stir it,then add 1/2 cup water.
  • Cover it with a lid & allow it to boil 5-10 min in low flame.
  • Open the lid,fry till water evaporated,don't make it too dry.
  • "ଛତୁ ବେସର" is ready to serve.Serve hot with steamed rice/roti.Smiley

Kadai Mushroom Recipe

                                              Kadai Mushroom Recipe

INGREDIENTS:

  • 1 packet mushroom
  • Potato-2 medium size
  • Capsicum-1
  • Tomato puree(2-medium size tomato)
  • Mixed masala (1-onion.8-garlic cloves,1-piece of ginger,some cumin seeds,4-red chili )
  • Some coriander leaves.
  • 1 spoon red chili powder.
  • 1/2 tsp garam masala powder.
  •  4-5 tsp refine oil (you can also use mustard oil) 
  • Salt to taste.

PREPARATION:

  • Cut the potato into cubes
  • Cut capsicum into cubes.
  • Grind the tomato to make puree.
  • Grind all the spices to make mixed masala(paste)
  • Finely chopped the coriander leaves.
  • Clean the mushroom, then cut into small pieces..
  • Soak the mushroom with some water & turmeric powder:5-10 min
  •  Heat the pan,add 1tsp refine oil.
  • Squeeze the mushroom from water & fry in the pan.
  • Add the potato cubes with this mushroom,because it soak all the water from mushroom.
  • fry till it becomes golden brown & keep aside.
  • Add 1 tsp oil in pan & fry the capsicum till it become soft.
  • Add 2-3 tsp oil in pan,add cumin/mustard seed.
  • When they starts cracking,add the mixed masala,red chili powder,turmeric powder,salt stir for 30 sec.
  • Then add the tomato puree,stir until the raw smell of mixed masala go.
  • Add  1 cup of water.
  • Let the curry boil for 5-10 min.
  • Add the fried mushroom,potato & capsicum.Boil it for 3 min & sprinkle some garam masala over it.
  • Garnish it with coriander leaves.
  • Then serve with rice/roti.
