Chocolate banana smoothie...

If you like chocolate and like bananas, give this chocolate banana shake recipe a try!

INGREDIENTS:

  • Ripe banana-1.
  • Milk-1+1/2 glass.
  • Coco powder/bournvita powder-3 tsp.
  • Sugar/honey-1 tsp.
  • Ice cubes-5-6.

PREPARATION:

  • Blend all above ingredients in a blender,transfer it to glass.

Potola rasa(ପୋଟଳ ରସା)(Parwal in coconut gravy)

Its a very popular dish in odisha...

INGREDIENTS:

  • Parwal/parval/pointed gourd-6-7.
  • Potato-2.
  • Mixed paste(1-onion,8-garlic cloves,1 piece of ginger,3-red chili)-3-4 tbsp.
  • Phutana(cumin seed+mustard seed+fenugreek seed+aniseed)-1/2 tsp.
  • Chopped tomato-1.
  • Coconut milk-1 cup.
  • Red chili powder-1 tsp.
  • Coriander powder-1/2 tsp.
  • Turmeric powder-1/2 tsp.
  • Cumin powder-1/2 tsp.
  • Garam masala powder-1/2 tsp.
  • Bay leaf-1.
  • Sugar-1/4 tsp.
  • Mustard oil-5-6 tbsp.
  • Salt to taste.

PREPARATION:

ପୋଟଳ ରସା

  • Wash & Peel the skin of Parwal & cut into 3 circular pieces.Wash & Cut potatoes almost 8 pieces. 
  • Heat 2 tsp oil in a pan,fry parwal till golden brown in color & keep aside.
  • Heat rest of oil in same pan,add sugar,when it turns golden syrup,add bay leaf & phutan when it start spluttering,add mixed paste,turmeric powder,red chili powder,coriander powder,Chopped tomato & salt,fry till raw smell goes.
  • Then add chopped potato & fried parwal & saute it 2-3 min,add coconut milk to it & let boil the curry.after boiling add garam masala powder in it & stir well.
  • "ପୋଟଳ ରସା" is ready to serve & serve hot with rice/roti.

Potola gota bhaja(stuffed parwal/parval/pointed gourd)...

Parwal is a vegetable cultivated in northern and eastern parts of India. In southern states it is rarely available.so when i m staying in chennai...i rarely got pointed gourd in market,also in high price..when i got this,i usually make different different verities of this...

INGREDIENTS:

  • Parwal/parval/pointed gourd-6-7.
  • Mixed paste(1-onion,8-garlic cloves,1 piece of ginger,some cumin seeds,3-red chili)-5-6 tsp.
  • Turmeric powder-1/4 tsp.
  • Mustard oil-4-5 tsp.
  • Salt to taste.
For the seasoning:
  • Phutana(cumin seed+mustard seed+fenugreek seed+aniseed)-1/2 tsp.

PREPARATION:


Stuffing:
  • Add 2 tsp mustard oil in a pan,add phutana. When it start splutteringWelcome to www.FreeSmileys.org ,add mixed paste,turmeric powder,salt stir till raw smell goes.Let it cool down.
Stuffing the parwal:
  • Wash & peel the skin of parwal,Cut one-side lengthwise(don't cut into two pieces),now gently stuff the parwal without breaking.
  • Heat rest of oil in a pan,add stuffed parwal one by one carefully in pan,sprinkle some salt over it to taste.Cook till golden brown color in all side.
  • "Potol gota bhaja" is ready to serve.Serve it with steamed rice/Pakhala.

Lau poda pitha(ଲାଉ ପୋଡ଼ ପିଠା)...

 "ଲାଉ ପୋଡ଼ ପିଠା" is a unique dish preparation from my mom's kitchen..its a different verity of normal poda pitha..but gives superb taste...

INGREDIENTS:

  • Rice-300 gm.
  • Lau(bottle gourd)-1.
  • Thin coconut slices-10-15.
  • Ghee-2 tsp.
  • Cardamom powder-2 tsp.
  • Sugar/jaggery-100 gm.
  • Broken cashew nut-2 tsp.
  • Baking powder-1 tsp.(optional)
  • Grated carrot-1.(optional)
  • Pinch of salt.

PREPARATION:


  • Soak the rice for about 4 hours.wash it thoroughly & grind it,don't make it fine batter. 
  • Cut the bottle gourd into large pieces,pressure cook it into 2 whistle.drain excess water if any & grind it to make fine paste.
  •  Take a bowl,add rice batter,bottle gourd paste,cardamom powder,coconut slices,ghee,sugar,broken cashew nut,baking powder,grated carrot,pinch of salt,mix well.
  •  Preheat the pressure cooker,Grease the inner side of pressure cooker with ghee,pour the batter in it & sprinkle some ghee on the top of the batter & close the lid(without mounting the whistle).
  • Place the pressure cooker in simmer flame for about 45-50 min.Now your poda pitha is ready,when the cooker comes to normal temperature,take out the pitha carefully & cut it into your desired shape & serve.
  • Delicious "ଲାଉ ପୋଡ଼ ପିଠା" is ready to serve.
                       *instead of pressure cooker u can also use oven.

Chenna manda pitha(ଛେନା ମଣ୍ଡା ପିଠା)...

"ଛେନା ମଣ୍ଡା ପିଠା" is a sweet dish made of rice flour stuffed with curd cheese and sugar/jaggery,black pepper.It is a steamed pitha which is prepared in all parts of odisha during festival...

INGREDIENTS:

  • Crushed rice(chaula chuna)-2 cup.
  • Curd cheese(dahi chenna)-1 cup.
  • Sugar/jaggery-1/3 cup.
  • Black pepper-1/2 tsp.
  • Crushed small cardamom-5-6.
  • Salt to taste.

PREPARATION:

Chenna manda pitha

Stuffing:

Mix finely crushed curd cheese & sugar/jaggery in a hetaed frying pan.add cardamom powder & black pepper powder & mix thoroughly,switch off the flame.

Pitha:

  • Heat water,add salt,prepare dough by adding crushed rice powder to boiled water,stir it continuously until u got smooth dough,switch off the flame,keep the dough in room temperature,knead it to make it soft.
  • Divide this dough into 8-10 balls & flatten it by using your palms to give it a round shape & place the stuffing in it.Close the flattened ball after putting the stuffing & carefully give them again a round shape.Steam the stuffed ball 5-10 min in a steamer.
  • "Chenna manda pitha" is ready to serve.
              *u may also prepare another variety of manda pitha by using semolina(sooji) instead of crushed rice powder.This is known as sooji manda.

Santula(ସନ୍ତୁଳା)-without onion & garlic...

"Santula" is a popular vegetable dish from the state of Orissa.It is a well known dish which is almost prepared in every household at least once a week. It’s healthy, nutritious and yummy.It’s a quick and fast to prepare dish which is served with roti or even rice. Santula is a traditional dish basically cooked with any seasonal vegetables with less or no oil.Santula is one dish where the vegetables are first boiled and then sauteed in a drop of oil to get a nice flavor. Highly nutrition, fat and cholesterol free and healthy to eat and it contains very less spices, good for patients too.

INGREDIENTS:

  • Brinjal-1.
  • Potato-1.
  • Ridge gourd-1.
  • Pumpkin-1/9.
  • Raw papaya-1/4.
  • Parwal-2.
  • Yam(mati aloo)-1/4.
  • Chopped Tomato-2.
  • Curry leaves-7-8.
  • Chopped coriander leaves.(for garnishing)
  • Curry powder(no onion & garlic)-1 tsp.
  • Garam masala powder-1/2 tsp.
  • Turmeric powder-1/4 tsp.
  • Red chili powder-1/2 tsp.
  • Coriander powder-1/4 tsp.
  • Cumin powder-1/4 tsp.
  • Kasturi methi-1/4 tsp.
  • Refined oil-2 tsp.
  • Phutan-1/2 tsp.
  • Salt to taste.

PREPARATION:


  • Wash,peel & cut all the vegetables into medium sizes,add it into pressure cooker,add turmeric powder,salt &  required water.Pressure cook it for 2 whistle.Let it cool for few min.

  • Heat oil in a pan,add phutan,curry leaves,then add chopped tomato,fry it till it smooth,then add curry powder,garam masala powder,red chili powder,kasturi methi,stir it 2-3 min.add boiled vegetables,mix it well..Put it in simmer level for 2-3 min.switch off the flame.
  • "Santula" is ready to serve..serve it with roti/paratha/rice..

Bhindi(okra/ladies finger) raita...

"Bhindi raita" is a unique dish preparation...its very much similar with "ଦହି ବାଇଗଣ"...Raita is a curd based accompaniment which is typically enjoyed with rice or Biryani.The Bhindi raita brings a nice variation to the typical raita .Deep fried bhindi slices mixed with thick yogurt and served tempered.

INGREDIENTS:

  • Bhindi/okra/ladies finger-250 gm.
  • Yogurt/Curd-2 cup.
  • Red chili-2.
  • Roasted Red chili-1 tsp.
  • Mustard seeds-1/2 tsp.
  • Curry leaves

     -5-10.

  • Refined oil-

    5 

    tsp.
  • Sugar-1 tsp.(optional)
  • Salt to taste.

PREPARATION:


  • Wash the whole bhindi & dry in a clean towel,cut into thin rings,Marinate with salt & fry in slow fire till it crispy & keep aside.
  • Take a bowl,Mix yogurt gently with fried bhindi & salt.
  • Heat oil in a pan,add broken red chili,mustard seeds when it start spluttering,add 

     Curry leaves.stir it 1 min,switch off the flame.then add it to mixed yogurt.

  • Add roasted red chili powder,mix it.

  • "Bhindi raitais ready to serve.serve hot with steamed rice...
