Peanut rice is a simple flavor rice of peanut & sesame seeds...it itself a full meal.u can take it as a main course... 
INGREDIENTS:
- Rice-1 cup.
- Roasted Peanut-1/2 cup. *remove the outer skin.
- Sesame seeds-1 tbsp.
- Turmeric-a pinch.
- Red chili-2.
- Grated coconut-1/4 cup.(Optional)
- Mustard seeds-1 tsp.
- Urad dal-1 tsp.
- Chana dal-1 tsp.
- Curry leaves-1 sprig.
- Refined oil-1 tbsp.
- Salt to taste.
Method:
- Pressure cook rice with salt & 1 tsp oil & cool down it in a plate, so that grains r separated from each other.
- Dry roast the sesame seeds & red chili,remove it from heat & let it cool.Then transfer it to a grinder jar with roasted peanut.Grind it into a coarse powder.
*if u r taking grated coconut,then dry roast along with sesame seeds & red chili.then grind it.
- Heat oil in a pan,add mustard seeds,when it splutter add urad dal,chana dal & curry leaves,saute it,then add pinch of turmeric powder.Add it to the rice along with powder mixture & mix it well.
- "Peanut rice" is ready to serve.Serve hot with any side dish of your choice...
Before 1 year when i came to Chennai,i heard from my husband that south Indian people always prepare lots of variety of rice...that time i was decided to make this..but unfortunately i don't get chance to make it,because he does not prefer any mixed variety of rice..but today i just made it for myself,since he has some party in office...Yahooooooooo

INGREDIENTS:
- Raw rice-2 cup.
- Turmeric powder-1/4 tsp.
- Fresh Curry leaves-15-20.
- Mustard seeds-1 tsp.
- Dry red chili-2.
- Chana dal(Bengal gram)-1 tbsp.
- Skinless Urad dal-1 tbsp.
- Vertically slit green chili-2.
- Chopped ginger-1+1/2 tsp.
- Hing-a pinch.
- Large lemon sized tamarind ball. (Soak in a cup of water ~10 min & extract pulp)
- Roasted Sesame seeds powder-1+1/2 tbsp.
- Roasted peanut-3 tbsp.
- Refined oil-3 tbsp.
- Salt to taste.
Method:
- Cook the rice in such a way that each grain is separate & spread it in a plate to cool,when it cool sprinkle 1 tbsp oil & fresh curry leaves.
- Heat rest of oil in a pan,add mustard seeds & dry red chili,when it splutter
add chana dal,urad dal,stir it till dal turns golden brown,then add slit green chili,chopped ginger ,hing & few curry leaves,fry for few minute.
- Add tamarind extract & turmeric powder,cook till the raw smell of tamarind disappears(~ 5-7 min),when it will thick but flowing paste,remove it from heat.
- Add the cooked tamarind paste with the cooked rice,mix well so that paste will evenly coated over rice.adjust salt.Finally sprinkle the roasted sesame seed powder & roasted peanut,combine well.
- "Tamarind rice" is ready to serve.Serve with raita.
Its a popular chutney prepared by using fresh mint leaves & coriander leaves..It can be served as an accompaniment of any Indian appetizers like tikkas & kebabs and also to prepare our favorite roadside snacks

- Chopped mint leaves-2 cup.
- Chopped coriander leaves-1 cup.
- Lemon juice-2 tbsp.
- Green chilies-2/3.
- Salt to taste.
Method:
- Combine all the ingredients & grind to a smooth paste in a blender & using very little water.
- "Mint/pudina chutney" is ready...Refrigerate & use as required.

- Semolina/sooji-1 cup.
- Onion-1(finely chopped).
- Ginger-1 inch(finely chopped).
- Green chili-2.
- Carrot-1/2.
- Beans-2.
- Cauliflower floret-1.
- Coriander leaves-few.
- Tomato-1.
- Green peas-8-10.
- Salt to taste.
For the seasoning:
- Mustard seeds-1/2 tsp.
- Chana dal(Bengal gram)-1/2 tsp.
- Skinless Urad dal-1/2 tsp.
- Curry leaves-little.
- Refined oil-1 tbsp.

- Dry roast sooji well in a pan in medium heat & keep aside.
- Chop all the vegetables & sliced the green chili & keep aside.
- Heat 1 tbsp of refined oil,add mustard seeds when it splutters,add chana dal+urad dal+curry leaves,saute it.
- Then add chopped onion,Saute till it become transparent,add ginger+green chili+tomato & saute a little.Add all the vegetables & cook for few more minutes(don't overcook).
- Add 2 cups of water+salt & bring it to boil,when water boil,add sooji gradually to the boiling water stirring,so that it does not form lumps.
- Cook in low flame till done,lastly add chopped coriander leaves & mix it.
- "Sooji upma" is ready to serve.Serve it with "Ghuguni"/"Sambara".

- Tamarind-a small lemon size ball.

- Oil-2 tsp.
- Salt to taste.
PREPARATION:
Wash mint leaves & tear the thick stem in the leaf & keep it aside.
Heat oil in a pan,add chopped onion,fry till it turns golden brown,add green chili & mint leaves,saute for few sec,switch off the flame.let it cool.
Grind the cooked mint leaves mixture,grated coconut,tamarind,salt with little water.
Heat oil in a pan,add mustard seeds,when it starts spluttering,add urad dal,fry it till golden brown in color.Pour the seasoning over the chutney.

Sambar is a very popular dish in South Indian cuisine. It is served with steamed rice or even as a side dish for idli & dosa . Sambar with rice is one of the main courses in everyday South Indian meals.Most South Indians are experts in making sambar. Sambar can be made with a wide variety of vegetables. Most commonly used vegetables are brinjal, drumstick, pumpkin, radish, ladiesfinger, onion etc. Today let us learn how to make mixed vegetable sambar.
*Serves-2-3 person.
INGREDIENTS:
- Toor dal-1/4 cup.
- Tamarind-small lemon size ball.
- Chopped Tomato-2.
- Finely chopped Onion-1.
- Mixed vegetable-1 cup
- Red chili-2.
- Green chili-2.
- Sambar powder-2 tsp.
- Turmeric powder-1/4 tsp.
- Mustard seeds-1 tsp.
- Curry leaves-few.
- Hing-a pinch.
- Salt to taste.
- Coriander leaves-few.(for garnishing)
PREPARATION:
- Wash & Soak toor dal in water for 10-15 min.Drain water,add it into pressure cooker with turmeric powder,salt & required water,pressure cook it for 4-5 whistle,then open the lid & mash the dal,then add vegetable,tomato & required water,again pressure cook it for 1 whistle.
- Soak tamarind in water & extract 1+1/2 cup tamarind juice.
Vegetables:
U can add any vegetable(*don't add bitter gourd
) ,but don't add too many vegetable,just add 1 cup mixed vegetables.
- Heat oil in a pan,add red chili,mustard seeds when it start spluttering,add curry leaves & hing,stir it 1 min,then add chopped onion,saute it for few min.Then add tamarind water,salt & sambar powder.let it boil till the raw smell of tamarind & sambar powder go,it will take approximately 5-7 min.
- Then add cooked dal along with needed water into it,let it boil 2-3 min. Garnish with chopped coriander leaves.
- "Sambar" is ready to serve.Serve hot with steamed rice/idli/dosa.
