Ginger Lemonade

Refreshing beverage with the goodness of ginger....Idea

INGREDIENTS:

  • Grated ginger-1 tsp.
  • Fresh lemon juice-3 tsp.
  • Sugar-2 tsp.
  • Soda-1 cup.
  • Ice cubes as required.
  • Water as required.

PREPARATION:

  • Blend the grated ginger,lemon juice,sugar,water in a blender except soda water.
  • After blending add soda water into it..mix well....
  • Add some ice cubes in a glass...Pour this mixture into it.
  • Serve ginger lemonade in individual glasses..Enjoy..Smiley

Soya chunks curry(Soya beans/Meal maker tarkari).....


Soya chunks curry is the delicious main course dish made with soya nuggets & potato.Soya chunks has lot of health benifits,its an excellent source of protein & rich in vitamin B.It promotes growth,low in fat & full of energy.Open-mouthed smile

INGREDIENTS:

  • Soya chunks-1 cup.
  • Potato-2 medium size(wash,peel & cut into cube shape).
  • Mixed paste(1-onion,8-garlic cloves,1 piece of ginger,some cumin seeds,3-red chili+1 small tomato)-3-4 tsp.
  • Sliced Tomato-(1-medium size tomato).
  • 1 spoon red chili powder.
  • Sugar-1/6 tsp.
  • 4-5 tsp refine oil.
  • 1/2 tsp garam masala.
  • Salt to taste.
For the seasoning:
  • Phutana(cumin seed+mustard seed+fenugreek seed+aniseed)-1/2 tsp.
For garnishing:
  • Some chopped coriander leaves.
  • Fresh cream(optional).
  • Tomato flower.

PREPARATION:


  • Heat a pan,add 1 cup water,add soya chunks+pinch of salt,bring it to boil,boil it for 3-4 min.Remove from fire,after 10 min drain out of the water,rinse this 2-3 times in fresh water & lightly squeeze out excess water.
*u can do also it in different ways:
               soak soya chunks in water+pinch of salt 3-4 hours,after that rinse it & squeeze it.
  • Heat oil in pan,,fry the soya chunks till golden brown & keep aside.
  • Add 3 tsp refine oil in pan,add sugar,add cumin seed.
  • When it start spluttering ,add mixed paste,red chili powder,turmeric powder,salt stir for 1 min.
  • Then add sliced tomato ,potato cubes stir until the raw smell of mixed paste go.
  • Add 1 cup of water,let the gravy boil for 5-10 min.
  • Add fried soya chunks in this gravy,boiled it for 3 min & sprinkle some garam masala over it.
  • Garnish it with coriander leaves,tomato flower & fresh cream.(*but fresh cream,i did not had sadly,so i didn't add......don't search in the picture.)
  • Soya -potato curry is ready to serveSmiley .Serve it with steamed rice/roti.

Mint rice(pudina rice)......


Mint rice is a delicious rice recipe made with mint leaves..Its a south Indian cuisine...This is a very  simple & flavorful rice... While cooking the whole house is filled with the aroma of mint....Its a combination of mint leaves+naughty lemon & wicked green chili. & "khake bolo pal banaye magical"  

INGREDIENTS:

  • Basmati rice or raw rice-1 cup.
  • Mint leaves-1 cup/1 medium sized bunch.
  • Wicked Green chili-2.
  • Onion-2 medium size.
  • Naughty Lemon juice-1 tsp/juice of half lemon.
  • Ginger(1 inch piece)-1.
  • Green peas(optional).
  • Oil-2 tsp.
  • Salt to taste.
  • Cinnamon-1 stick.
  • Cardamon-1.

PREPARATION:


  • Wash Mint leaves & grind it with 1/2 of a onion+green chili+ginger+1/4 cup water.
  • Soak basmati rice 20-30 min,wash it & keep aside.
  • Take a pressure cooker,add oil,cinnamon,cardamon stir it for a sec.Then add sliced onion,stir it till it turns golden brown in color.
  • Add mint paste,stir it till the raw smell of mint paste goes.here u can also green peas,if u have.
  • Add soaked rice+lemon juice+salt+2 cup water.Pressure cook for 1 whistle..switch off the flame...
  • Serve hot with raita/mixed pickle....

Cold coffee....


A typical recipe for Cold Coffee...u can enjoy it @home instead of going to coffee bar wasting your time & money...Here i m preparing for 2 person....:)

INGREDIENTS:

  • Milk-2 cup.
  • Coffee powder-1 tsp.
  • Sugar-3 tsp.
  • Water-1/2 cup.
  • Vanilla ice cream-3 tsp.
  • Ice cubes as required.

PREPARATION:


  • Heat water in a pan,add sugar & coffee powder  into it,boil 2-3 min & allow it to cool.
  • Blend the coffee mixture,milk,ice cream & ice in a blender for 2 min.
  • Serve chilled & u can also add ice cubes in it...Smiley

Hariyali chicken-chicken in spinch(palak) gravy...

Chicken with palak & coriander paste gives a unique taste....its a very delicious chicken curry made with palak..Hariyali chicken is most popular & delicious dish in north Indian cuisine...

INGREDIENTS:

  • Chicken-500gm.
  • Palak(spinach)-1 bunch.
  • Chopped onion-3 medium sized.
  • Chopped Garlic cloves-12.
  • Chopped Green chili-6 or more(to taste).
  • Finely chopped coriander leaves-2 tsp.
  • Cinamon-1 stick.
  • Bay leaves-1.
  • Curd-1/2 cup.
  • Refined oil-5 tsp.

PREPARATION:


  • Boil the palak in a vessel till it soft & keep aside.
  • Heat 2 tsp oil in pan,add bay leaves,cinnamon stir it 1 min,add chopped onion,fry it till it turns golden brown in color.
  • Add chopped garlic,green chili & coriander leaves.then add palak to this mixture,fry this mixture 2 min,switch off the flame,let it cool.
  • Grind this mixture to make it paste.
  • Again heat 3 tsp oil in the same pan,add the paste,add curd,stir it till the raw smell of mixed paste go or the oil leaving the sides of the pan.
  • Add chicken & salt,cook on medium heat till the chicken is done.
  • Serve hot with Steamed rice/roti..Puppy dog eyes.

Chena tarkari(ଛେନା ତରକାରୀ)(soft/crumbled paneer curry).....

Now i m in chennai...its very difficult to get chena(crumbled paneer) Fingers crossedin market.usually i prepare chena in my home...its very easy process...anyone can prepare...
3 easy step to follow to get homemade chena @ home....Love Struck
1st boil milk,then add some lemon juice/curd,leave it 1 hour,then again boil it,when milk curdles switch off the flame & strain the paneer.

INGREDIENTS:

  • Crumbled paneer-200gm.
  • Maida-2 tsp.
  • Mixed paste(1-large onion,8-garlic cloves,1 piece of ginger,3-red chili)-4 tsp.
  • Turmeric powder-1 tsp.
  • Chili powder-1 tsp.
  • Kasturi methi-1 tsp.
  • Garam masala-1 tsp.
  • Sliced tomato-1.
  • Cinnamon-2 small stick.
  • cardamom-2.
  • bay leaves-2.
  • Sugar-1/4 tsp.
  • Oil for deep frying.
  • Salt to taste.

PREPARATION:

Chena tarkari
  • Take a bowl,add paneer,maida & salt.mix it properly & make small balls.
  • Heat oil in pan & deep fry the balls till golden brown in color, don't over fry it ,keep aside.
  • Heat oil in another pan,add sugar(for nice color)cinnamon,cardamom & bay leaves.
  • Add mixed paste & saute it for 3 min,add turmeric powder,chili powder,Kasturi methi,sliced tomato & stir it till the raw smell of mixed paste go.
  • Add 2 cup of water & let the gravy boil for 5-10 min..
  • Add fried balls in this gravy,boiled it for 2 min & sprinkle some garam masala over it.
  • "Chena tarkari" is ready to serveSmiley .Serve it with steamed rice/roti.

Mudi ke ladoo-Puffed rice Jaggery balls(ମୁଢ଼ି ଲଡୁ)....

This recipe of mudi ke ladoo (ମୁଢ଼ି ଲଡୁ) sounds unique but its very tasty, filled with sweetness and goodness of jaggery. This recipe is directly comes from my mom's kitchen...she is a very good cook i have ever seen....I learn this recipe from my mom.....Secret telling smile

INGREDIENTS:

  • Mudi(puffed Rice)-2 cup.
  • Gud(Jaggery powder)-1/2 cup.
                   *u can adjust the sweetness by taking more/less amount of gud,its totally depends on your taste.
  • Coconut pieces-1/4 cup(optional).
  • Water-1/3 cup.

PREPARATION:


  • Heat a pan,add water,then add gud,allow to heat till it turns thicken syrup.
*One easy step to know that jaggery(gud) is ready for ladoo or not:
1st take 1 plate with some water,drop some jaggery syrup into it,if it float/not sticking with water,then it completely ready for ladoooooooooooo.... 
  • Remove from heat,pour this syrup to the mudi(puffed rice),mix well.
  • Grease your palm with ghee/oil,start making the mixture small/medium/large size ball(as your wish).
  • Delicious & healthy mudi ke ladoo (ମୁଢ଼ି ଲଡୁ) is ready to taste now...Drooling

Curd rice.....

Curd rice is a popular South Indian dish.A perfect south Indian meal will never end up without this simple curd rice.Curd rice also known as yogurt rice is the most comforting food for me.Curd Rice is truly comfort food! Of South Indian origin, it tastes great with just a pickle or chutney.Some times I temper my leftover rice and enjoy it heartily! In South Indian cuisine, its common to eat curd rice at  lunch.Yogurt Rice is good for lunch box as a complete meal.Today we will learn how to prepare South Indian Curd rice by following this easy step.....

INGREDIENTS:

  • Rice-1 cup.
  • Curd-1 cup.
  • Mustard seed-1 tsp.
  • Chana dal-1 tsp.
  • Finely chopped ginger-1/2 tsp.
  • Green chili-1-2(as your wish).
  • Curry leaves-10-12.
  • Refined oil-1 tsp.
  • Salt to taste.

PREPARATION:


  • Wash & cook the rice in such a way that it slightly overcooked(u can pressure cook rice for 4-5 whistle).Mash it nicely with potato masher,if it is not available,u can mash it by using back side of serving spoon..
  • Let it cool,add curd & needed salt.
  • Heat oil in a pan,add mustard seeds,let it crackle,add chana dal,saute it till the dal turns golden brown.
  • Then add chopped ginger,curry leaves & sliced green chili,saute it for a few second.Pour it over the curd rice & mix well...
  • Serve it with pickle or any side dishes..
                   *The curd rice will thicken as it cool,u can adjust the thickness by adding                                                                     curd.
