"Bhindi raita" is a unique dish preparation...its very much similar with "ଦହି ବାଇଗଣ"...Raita is a curd based accompaniment which is typically enjoyed with rice or Biryani.The Bhindi raita brings a nice variation to the typical raita .Deep fried bhindi slices mixed with thick yogurt and served tempered.
INGREDIENTS:
- Bhindi/okra/ladies finger-250 gm.
- Yogurt/Curd-2 cup.
- Red chili-2.
- Roasted Red chili-1 tsp.
- Mustard seeds-1/2 tsp.
- Curry leaves
-5-10.
- Refined oil-
5
tsp. - Sugar-1 tsp.(optional)
Salt to taste.
PREPARATION:
- Wash the whole bhindi & dry in a clean towel,cut into thin rings,Marinate with salt & fry in slow fire till it crispy & keep aside.
- Take a bowl,Mix yogurt gently with fried bhindi & salt.
- Heat oil in a pan,add broken red chili,mustard seeds when it start spluttering,add
Curry leaves.stir it 1 min,switch off the flame.then add it to mixed yogurt.
Add roasted red chili powder,mix it.
"Bhindi raita" is ready to serve.serve hot with steamed rice...
