Besara is an authentic Odiya dish prepare with mustard paste....
INGREDIENTS:
- Mushroom-200 gm.
- Mixed paste (1-onion.8-garlic cloves,1 tbsp mustard seeds,4-red chili )-3 tbsp.
- Turmeric powder-1 tsp.
- Dried mango slices(ambula)-1.
- Sliced tomato-2.
- Sliced green chili-2.
- Mustard oil-4-5 tsp.
- Salt to taste.
PREPARATION:

- Clean the mushroom,then cut into small pieces.Soak the mushroom with some water & turmeric powder for 5-10 min,this will remove the unwanted impurities from mushroom.
- Heat the pan,add 1 tsp mustard oil,squeeze the mushroom from water & fry in the pan,fry till it becomes golden brown in color & keep aside.
- Add 3 tsp Mustard oil in a pan,add cumin seed.When it start spluttering ,add mixed paste,turmeric powder,salt stir for 1 min.
- Then add fried mushroom,sliced tomato,dried mango slices,sliced green chili,stir it,then add 1/2 cup water.
- Cover it with a lid & allow it to boil 5-10 min in low flame.
- Open the lid,fry till water evaporated,don't make it too dry.
- "ଛତୁ ବେସର" is ready to serve.Serve hot with steamed rice/roti.
