Sambar is a very popular dish in South Indian cuisine. It is served with steamed rice or even as a side dish for idli & dosa . Sambar with rice is one of the main courses in everyday South Indian meals.Most South Indians are experts in making sambar. Sambar can be made with a wide variety of vegetables. Most commonly used vegetables are brinjal, drumstick, pumpkin, radish, ladiesfinger, onion etc. Today let us learn how to make mixed vegetable sambar.
*Serves-2-3 person.
INGREDIENTS:
- Toor dal-1/4 cup.
- Tamarind-small lemon size ball.
- Chopped Tomato-2.
- Finely chopped Onion-1.
- Mixed vegetable-1 cup
- Red chili-2.
- Green chili-2.
- Sambar powder-2 tsp.
- Turmeric powder-1/4 tsp.
- Mustard seeds-1 tsp.
- Curry leaves-few.
- Hing-a pinch.
- Salt to taste.
- Coriander leaves-few.(for garnishing)
PREPARATION:
- Wash & Soak toor dal in water for 10-15 min.Drain water,add it into pressure cooker with turmeric powder,salt & required water,pressure cook it for 4-5 whistle,then open the lid & mash the dal,then add vegetable,tomato & required water,again pressure cook it for 1 whistle.
- Soak tamarind in water & extract 1+1/2 cup tamarind juice.
Vegetables:
U can add any vegetable(*don't add bitter gourd ) ,but don't add too many vegetable,just add 1 cup mixed vegetables.
- Heat oil in a pan,add red chili,mustard seeds when it start spluttering,add curry leaves & hing,stir it 1 min,then add chopped onion,saute it for few min.Then add tamarind water,salt & sambar powder.let it boil till the raw smell of tamarind & sambar powder go,it will take approximately 5-7 min.
- Then add cooked dal along with needed water into it,let it boil 2-3 min. Garnish with chopped coriander leaves.
- "Sambar" is ready to serve.Serve hot with steamed rice/idli/dosa.
