Watermelon & ginger cooler-Summer special...

Hi friends...here i have one more watermelon recipe for u...In this recipe u can find the goodness of both watermelon & ginger...It makes you much healthier and works miracles in your body..And this is a drink which helps very much in digestion.....:)

INGREDIENTS:

  • Watermelon chunks(seedless)-2 cup.

  • Ginger chopped-1/4 tsp.

  • Ice cubes-5-6.
  • Fresh mint leaves-5-6 leaf.
  • Soda-1 cup.
  • Sugar-2 tsp.
  • Lemon juice-2 tsp.

PREPARATION:


  • Freeze the watermelon chunks in the freezer for 3 - 4 hrs.Blend the watermelon,ice cubes,ginger,mint leaves,lemon juice & sugar in a blender except soda water.
  • After blending add soda water into it..mix well....
  • Serve watermelon & ginger cooler in individual glasses..Enjoy..Smiley

Chilled Watermelon Yogurt/curd...

Hello friends!! It's Summer! There's sunny warmth all around...When it is hot outside, you need something that makes you cool from inside..Drinking cold water makes you cool instantly, But you need something extra..which really gives u a comfort from scorching sun....
when my husband comes from office these day,i usually gives him different different verities of watermelon drink..he really like it.....here i have a wonderful  Innovative yogurt recipe with flavor of watermelon..& i m sure that everybody should liked it...


INGREDIENTS:


  • Watermelon chunks(seedless)-2 cup.

  • Ice cubes-5-6.
  • Fresh mint leaves-5-6 leaf.
  • Yogurt/curd-1 cup.
  • Sugar-1+1/2 tsp.

PREPARATION:

Watermelon smoothie..

There is nothing better on a hot summer day  than an ice cold watermelon smoothie. If you love watermelon, you'll be a huge fan of this cool drink.It is perfect for the summer time......
                                       

INGREDIENTS:

  • Watermelon chunks(seedless)-2 cup.
  • Ice cubes-5-6.
  • Fresh mint leaves-5-6 leaf.
  • Ginger chopped-1/4 tsp.
  • Sugar(optional) as per taste.

PREPARATION:


  • Freeze the watermelon chunks in the freezer for 3 - 4 hrs.Blend the watermelon,ice cubes,chopped ginger,mint leaves & sugar in a blender.
  • Serve chilled in individual glasses...Secret telling smile

Chili Gobi dry...

I love cauliflower a lot..I often make chili Gobi in my kitchen..it slightly resembles with Gobi Manchurian.. Usually i always want to avoid oil as much as possible.. that's why here i avoid deep fry of cauliflower floret..but still it gives u a better taste..Puppy dog eyes..So hope you all like it.. OK,time to go to the recipe...

INGREDIENTS:

  • Cauliflower floret-2 cup.
  • Capsicum-1.(*u can add color capsicum(red/yellow) for pleasant look)
  • onion(3-medium size).
  • Tomato-(1 medium size).
  • Vertically sliced green chili-2.
  • 4-garlic cloves,1-small piece of ginger.
  • Some coriander leaves.
  • Corn flour-2 tsp.
  • Soya sauce-1 tsp.
  • Chili sauce-1 tsp.
  • Tomato ketchup- 2 tsp.
  • Pepper powder-1/4 tsp.
  • Refine oil for frying.
  • Salt to taste.

PREPARATION:



  • Cut capsicum,onion,Tomato into cubes.
  • Finely chopped the garlic & ginger.
  • Finely chopped the coriander leaves.
  • Heat 2 tsp oil in pan & fry cauliflower floret till golden brown in color & keep aside.
  • Add 3 tsp oil in pan & fry the onion & capsicum cubes for 1 min.
  • Add chopped garlic & ginger.fry it for 1 min.
  • Add tomato cubes,green chili into it,fry it for 20 sec.
  • Add fried cauliflower floret,salt  stir for 1 min,reduce the heat.
  • Add chili sauce,soya sauce,tomato ketchup,mix well.
  • Mix 2 tsp corn flour with 4 tsp water & small pinch of salt,then add it into the fry,stir for 10 sec.then add pinch off pepper powder,mix it.
  • Garnish it with coriander leaves.
  • Then serve hot it with roti/nan...:)

Simba rai(Indian broad beans with mustard paste)

Its not a very pleasant looking beanSad smile but it packed with a lot of fibre and nutrients like most good looking vegetables don't have. Today’s recipe is beans cooked in mustard seed paste(besara), a very basic recipe in odia kitchen...Hope this recipe helps all you broad bean haters will definitely love this....so lets go to do the traditional odia simba rai.....

INGREDIENTS:

  • Simba(broad beans)-200 gm
  • Potato(aalu)-2 medium size.
  • Mixed masala (1-onion.8-garlic cloves,1-piece of ginger,1/4 tsp cumin seeds,1 tsp mustard seeds,4-red chili ).
  • Phutana(cumin seed+mustard seed+fenugreek seed)-1/2 tsp.
  • Turmeric powder-1/2 tsp.
  • Salt to taste.
  • Mustard oil-3-4 tsp.

PREPARATION:


  • Wash the beans &  potato,cut beans & potato into lengthwise pieces..Doh
  • Heat oil in a pan,add phutana,when it starts spluttering,add mixed masala,beans & potato,turmeric powder,salt stir it,then add 1/2 cup water.
  • Cover it with a lid & allow it to boil 5-10 min in low flame.
  • Open the lid,fry till water evaporated(add oil if required).
  • Serve hot with steamed rice/pakhala.

Mixed vegetable soup....


Soups are very light if we prepare them with more fresh vegetables. Mixed Vegetable Soup is loaded with anti-oxidant rich vegetables like capsicums, tomatoes and cabbage. They provide all nutrition to the body with fewer calories. Here is a recipe for a simple mixed vegetable soup.You must try mixed vegetable soup recipe if you want to enjoy this....Drooling 

INGREDIENTS:

  • Finely chopped mix vegetable like cabbage,french beans,green chili,tomato.
  • Grated carrot-1/6 cup.
  • Green peas-1/8 cup.
  • Sweet corn-1/8 cup.(optional)
  • Chopped coriander leaves.
  • Chopped garlic cloves-8.
  • Finely chopped small onion-1.
  • Corn flour-1+1/2 tsp.
  • Butter-1 tsp.
  • Water-6-7 cup.
  • Pepper powder(as per ur taste).
  • Salt to taste. 

PREPARATION:



  • Take a pressure cooker,add all the veggies,add 1 cup water+salt,pressure cook it till 1 whistle..when it give whistle,after that remove all the pressure.
              *otherwise the veggies will overcook..

  • Heat a pan,add butter,when it melts,add chopped onion,fry it till light golden brown in color.add chopped garlic+chopped green chili,stir for 1/2 min,then add boiled veggies,fry for 2 min.
  • Take 2 cup of water,add 1+1/2 tsp cornflour mix well to avoid lumps,add it to vegetables mixture.Loser
  • Add salt,sugar,pepper powder,stirring continuously.When it thicken to desired consistency,take off from heat.
                           *you can also add fresh cream for better taste(its optional).
    • Serve hot.u can also add more salt & pepper powder as per your taste.

Lemon rice...

Lemon rice is a delicious south Indian dish.Lemon juice gives a very refreshing and tangy flavor to the rice.You can also make it with leftover rice. U can enjoy this dish with just a bowl of salad.Smiley. The lemon in the rice aids in the absorption of iron in your body due to its high vitamin c content...

INGREDIENTS:

  • Boiled rice-1+1/2 cup.
  • Lemon-1.
  • Mustard seed-1 tsp.
  • Chana dal-1 tsp.
  • Peanuts-1/4 cup.
  • Green chili-1.
  • Curry leaves-10-12.
  • Turmeric powder-1/4 tsp.
  • Red chili-2.
  • Refined oil-1 tsp.
  • Salt to taste.

PREPARATION:

  • Heat oil in a pan,add broken red chili,mustard seeds,when it start spluttering,add chana dal+peanuts+green chili,saute it till the dal turns golden brown.
  • Add curry leaves,stir 1 min,add turmeric powder,stir again 1/2 min.
  • Then add boiled rice,salt & lemon juice,mix well,stir 1 min.switch off the flame.
  • No need to garnish... because it looks amazing itself...Winking...Serve hot with salad/raita...

Panchamrut.....

All religious Hindu Pooja and functions are incomplete without the Panchamrut- Panchamrit prasad. Its a mixture of five foods used in HINDU worship and PUJA..usually honey,sugar,milk,curd,and ghee. Worshiping gods and their idols with Panchamrut is considered highly auspicious.

Significance of the ingredients of Panchamrut:

  • Milk is for the blessing of purity and piousness.
  • Yogurt is for prosperity and progeny.
  • Honey is for sweet speech.
  • Ghee is for victory.
  • Sugar is for happiness.
  • Water is for purity.
Lets celebrate MAHA SHIVARATRI with this panchamrut bhog/prasad...
         
                                    "OM NAMAH SHIVAYA"

INGREDIENTS:

  • Sago-1 cup(wash & soak 3-4 hr).
  • Milk-1 cup.
  • Crumbled paneer/chenna(u can make chenna @home...1st boil milk,then add some lemon juice/curd,leave it 1 hour,then again boil it,when milk curdles switch off the flame & strain the paneer)-50 gm.
  • Curd-1 tsp.
  • Honey-1 tsp.
  • Ghee-1 tsp.
  • Sugar-5-7 tsp.
  • Chopped Apple-1.
  • Chopped grapes -1/4 cup.
  • Grated coconut-1/2 cup.
  • Chopped orange-1.
  • Ripe banana-2.
  • Chopped cucumber-1.
  • Pepper powder-1/2 tsp.

PREPARATION:




  • Mix all the ingredients in a bowl,mash the ripe banana....Serve fresh...Smiley
                    *u can also add some more sugar as per your taste....

Samosa(singada) recipe.....

Samosas are most popular Indian snacks that finds a place in almost every bakery & chat shop.Its a India cuisine,but its a universal favourite throughout the country...Drooling.Pockets of dough stuffed with a potato mixture,deep fried.An all time favourite tea time snack...Winking..Here is the traditional crispy north Indian samosa recipe....Puppy dog eyes

INGREDIENTS:

For covering:
  • Refined flour(Maida)-1 cup.
  • Ajwain-1/2 tsp.
  • Refined oil-2 tsp+for deep fry.
  • Salt to taste.
For stuffing:
  • Boiled potato(peeled & crumbled )-2.
  • Boiled peas-1/2 cup.
  • Ginger+garlic paste-1 tsp.
  • Finely Chopped onion-1.
  • Finely Chopped green chili-2.
  • Pepper powder-1 tsp.
  • Some chopped coriander leaves.
  • Turmeric powder-1 tsp.
  • Red chili powder-1 tsp.
  • Cumin powder-1 tsp.
  • Garam masala-1/2 tsp.
  • Kasturi methi-1/2 tsp.
  • Lemon juice-1 tsp.
  • Salt to taste.

PREPARATION:


  • Mix the maida with salt,ajwain,refined oil to form a mixture.Now slowly add water to make it dough,not too soft. Divide the dough & make it small ball in shape,keep aside & covered it with moist cloth for 15-20 min.
  • Heat a pan,add 3 tsp refine oil,add cumin seed.When it start spluttering,add chopped onion,when it turns golden brown,add ginger+garlic  paste,red chili powder,cumin powder,turmeric powder,pepper powder,salt stir for 1 min.
  • Then add green chili,coriander leaves,garam masala,kasturi methi,lemon juice,stir for 1 min.
  • Add crumbled potato,boiled peas mix it.Stuffing is ready.Prepare the outer layer of samosa.
  • Roll each ball into slightly thin puri,take a knife,divide the rolled puri into two by cutting through the center.Now take the semi circle piece & make a fold  in the shape of a triangle as shown in the image.


  • Now stuff the cone with a portion of prepared filling,seal the edges carefully with the help of  the flour-water paste.Repeat this step to make more samosa.
  • Heat sufficient oil in a pan for deep frying,then add few samosa in pan,fry this in medium flame till golden brown in color & crispy in all side.
*If you use a high heat, the samosa crust will be too soft and not crispy.
  • Drain it in tissue paper..Enjoy this hot samosa  with either green chutney or tomato sauce.
