Jeera pulao-jeera rice(Cumin flavored rice)..

Jeera (zeera) rice is a very simple and flavorful rice and can be prepared in a few minutes. It is the simplest of all flavored rice and goes well with most of the gravies we usually prepare for roti/chapati. Today let us learn how to prepare jeera pulao/rice following our easy jeera pulao recipe.

INGREDIENTS:

  • Basmati rice-1 cup.
  • Finely chopped Onion-1(optional).
  • Ghee/butter-2 tsp + 1 tsp oil.
  • Cumin seeds(jeera)-2 tsp.
Whole Garam masala:
  • Cloves-2.
  • Cinnamon-1 inch piece.
  • Bay leaf-1.
  • Star anise-1(optional).

PREPARATION:

Jeera rice

  • Wash & soak basmati rice in water for 20 min.Drain & keep it aside.
  • Heat oil in a pan,add whole garam masala,saute for few seconds & then add cumin seeds,when it splutters,add onion & saute till golden brown in color,then add the drained rice & fry for a few minutes.add 2 cups of water,needed salt & cook rice till done.
*u can cook rice in a rice cooker/pressure cooker/in a pan with a lid.
  • "Jeera rice" is ready to serve...fluff it with a fork & serve it with any gravy side dish of your choice.

Soybean Pualv...

INGREDIENTS:

  • Cooked soya nuggets-1 cup.
  • Rice-1 cup.
  • Carrot chopped(big pieces)-1.
  • Chopped French beans(big pieces)-1/4 cup.
  • Green peas-1/4 cup.
  • Garam masala-1 tsp.
  • Cloves-4.
  • Bay leaves-4.
  • Chopped green chili-1.
  • Chopped Onion-1.
  • Refined oil-2 tsp.
  • Salt to taste.
  • Water-4 cups.
  • Ghee/butter-1 tsp.

PREPARATION:


  • Heat oil in a pan.add cloves,bay leaves,chopped green chili & onion.fry for 2 min & add rice,fry for another 2 min & add water.cover the pan & cook for 5 min.
  • Add cooked soya nugget,chopped carrot,french beans,green peas,garam masala & salt,mix it.Cover & cook till done,lastly add some ghee for nice flavour.
  • "Soybean pulav" is ready to serve....serve hot...

Chuda mixture(flattened rice mixture)...

INGREDIENTS:

  • Flattened rice/thin poha-2 cup.
  • Red chili-2.
  • Roasted red chili powder-1/2 tsp.
  • Curry leaves-15-20.
  • Chaat masala-1 tsp.
  • Roasted peanut/peanut pakoda-1/2 cup.*i use peanut pakoda...
  • Ghee-1 tsp.
  • Refined oil-1 tsp.
  • Black Salt to taste.

PREPARATION:

Chuda mixture

  • Heat a pan,add flattened rice to dry roasting,stir continuously,so that it cant be stick on pan & not to be burn,fry it till it crispy & keep aside.
  • Heat oil in the same pan,add broken red chili,curry leaves,stir it 1 min,then add roasted flattened rice,salt,red chili powder,peanut pakoda,ghee & mix it well,stir it 2-3 min on medium flame,switch off the flame.
  • Crispy"Chuda mixture" is ready to serve....enjoy the monsoon with this crispy chuda mixture.

Mango juice....

The markets here are flooded with delicious and juicy mangoes. I was waiting for this season as Mango juice is one of my favorite drink. It is very easy to prepare and is also filling.You can top it with a scoop of vanilla ice cream if desired. Let us see how to prepare this easy and refreshing drink.

INGREDIENTS:

  • Ripe mango-1.
  • Cold water-1 glass.
  • Ice cubes-5-6.
  • Sugar/honey to taste.

PREPARATION:

Mango juice

  • Peel the mango & cut into cubes.
  • Blend all the ingredients in a blender,transfer it to glass.
  • Enjoy the delicious "Mango juice"...
Note-Adjust the quantity of water according to your desired consistency.

Apple oats smoothie...

INGREDIENTS:

  • Apple-1(peeled & chopped).
  • Oats-4 tsp.
  • Milk-2 cup(chilled).
  • Dates-3(soak it in a little milk if required)(optional).
  • Honey/sugar-2 tsp if needed.

PREPARATION:

Apple-oats smoothie

  • Cook oats in half cup of water until thick.leave it cool.
  • Add the cooked oats,chopped apple,milk,dates,honey in a blender & blend until smooth,pour it into a glass & serve chilled.
  • "Apple-oats smoothie" is ready to serve...enjoy.

Methi (Fenugreek) Puri....

INGREDIENTS:

  • Wheat flour-2 cup.
  • Methi leave-1 cup.
  • coriander leave-1/2 cup.
  • Sesame seeds(til)- 1 tsp.

  • Green chili-1
  • Salt to taste.
  • Refined oil for deep frying.

PREPARATION:

Methi puri

  • Wash methi leaves,coriander leaves & drain the water.
  • Grind methi leaves,coriander leaves,green chili (don't make fine paste).
  • Pour this mixture into a bowl & add wheat flour,salt,1 tsp oil,

    Sesame seeds(til)

     & some water  to make a soft dough,keep aside 30 min.
  • Now make equal sized ball out of it & roll the ball to make puri.
  • Heat sufficient oil in a pan & put the roll  on it,after few second,slightly press the puri with the slotted ladle & flicker hot oil on the top of it,this will help the puri to puff up nicely & flip it over to the other side,fry till golden brown in color.
  • Remove with slotted ladle & place it on the absorbent paper to drain excess oil.
  • "Methi puri" is ready to serve....Serve it with aloo dum or any other side dish in your choice.

Strawberry juice....

Strawberry juice is the healthiest way of deriving all the benefits strawberry has to offer. It is a well-known fact that strawberries are rich in vitamin C, potassium and antioxidants. Enjoy this  healthy and refreshing drink,specially on a hot summer day!!!!!!

INGREDIENTS:

  • Fresh strawberries-3 cups.
  • Sugar-3 tsp/adjust it as per your requirement.
  • Ice cubes-5-6.

PREPARATION:

Strawberry juice


  • Take the strawberries,remove the leaves,cleaned & cut into pieces
  • Put them in a blender,add sugar & ice cubes,blend it & transfer it to glass.
  • "Strawberry juice" is ready to serve...enjoy the refreshing drink..

Ambula Bhendi Khatta(okra in dry mango gravy)......

INGREDIENTS:

  • Bhendi/okra/ladies finger-15-20.

  • Dry mango(ambula)-2.

  • Mixed paste (1-onion.8-garlic cloves,1-piece of ginger,1+1/2 tsp mustard seeds,4-red chili )-3 tsp.
  • Turmeric powder-1 tsp.
  • Mustard oil-4-5 tsp.
  • Salt to taste.

PREPARATION:

Ambula bhendi

  • Wash & clean the bhendi,cut it into big size pieces.Heat 2 tbsp oil in a pan,fry the bhendi to avoid stickiness without changing its beautiful green color & keep aside..
  • Add 3 tsp Mustard oil in a pan,add cumin seed.When it start spluttering ,add mixed paste,turmeric powder,salt stir for 40 sec.
  • Then add fried bhindi & 1/2 cup water.Let the gravy boil 5 min or ladies finger soft,then add dry mango & cook for another 1 min,remove from fire.
  • "Ambula bhendi" is ready to serve...serve hot with rice...Happy.

Mango lassi....

INGREDIENTS:

  • Mango slices-1/2 cup.
  • Curd/Yogurt-1+1/2 glass.
  • Sugar- as required.
  • Water-1/2 cup.
  • Ice cubes-5.
  • Broken cashew-4-5.(for garnishing)
  • Grated coconut-2 tsp.(for garnishing)
  • Pistaches-2.(for garnishing)

PREPARATION:

Mango lassi

  • Peel the mango & cut into cubes.Remove the seed.
  • Blend the mango with curd to fine paste,then add rest of the ingredient & blend it for a few seconds.Adjust the consistency by adding water.
  • "Mango lassi" is ready to serve....serve chilled.PartyHappyBlushing

Naddia bhendi(Okra in coconut gravy)....

INGREDIENTS:

  • Bhendi/okra/ladies finger-15-20.

  • Mixed paste (1-onion.8-garlic cloves,1-piece of ginger,1/2 tsp cumin seeds,4-red chili )-3 tsp.
  • Capsicum-1.(*u can add color capsicum(red/yellow) for pleasant look)

  • Turmeric powder-1 tsp.
  • Sliced tomato-2.
  • Red chili powder-1 tsp.

  • Coriander powder-1/2 tsp.

  • Garam masala powder-1 tsp.

  • Coconut milk-1 cup.
  • Bay leaf-1.
  • Sugar-1/4 tsp.
  • Cumin seed-1/4 tsp.
  • Sliced green chili-2.
  • Mustard oil-4-5 tsp.
  • Salt to taste.

PREPARATION:

Naddia bhendi

  • Wash & clean the bhendi & 

    Capsicum

    ,cut it into big size pieces.Heat 2 tbsp oil in a pan,fry the 
    bhendi to avoid stickiness without changing its beautiful green color & keep aside...
  • Heat rest of oil in same pan,add sugar,when it turns golden syrup,add bay leaf & phutan when it start spluttering,add mixed paste,turmeric powder,red chili powder,coriander powder,Chopped tomato salt,fry till raw smell goes.
  • Then add chopped 

    Capsicum

     & fried 
    bhendi  & saute it 2-3 min,add coconut milk to it & let boil the curry.after boiling add garam masala powder in it & stir well.
  • "Naddia bhendi" is ready to serve & serve hot with rice/roti.
