Aloo kassa(Spicy potato fry)-traditional odia way....

Its a dry version of aloo dum. Its a all time favorite food of odisha...specially it available in all tiffin stall....most of the people of odisha demand to eat "bara" & "aloo kasa"  in tiffin stall.
*Serves-2 person.

INGREDIENTS:

  • Potato(aloo)-250 gm.

  • Chopped onion-1.

  • Ginger+

    garlic 

    paste-

    3-4 tsp.

  • Chopped 

    tomato

    -1.
  • Red chili powder-1 tsp.

  • Cumin powder-1/2 tsp.

  • Coriander powder-1/2 tsp.

  • Turmeric power-1/2 tsp.

  • Sugar-1/6 tsp.

  • Bay leaves-1.

  • 4-5 tsp mustard oil.
  • 1/2 tsp garam masala.
  • Salt to taste.
For the seasoning:
  • Phutana(cumin seed+mustard seed+fenugreek seed+aniseed)-1/2 tsp.
For garnishing:
  • Some chopped coriander leaves.

PREPARATION:


  • Wash,peel & cut the potato into cube shape.
  • Heat oil in a pan,add sugar(for nice color) & bay leaves.add chopped onion,fry till golden brown in color.
  • Add ginger-garlic paste,chopped tomato,red chili powder,cumin powder,turmeric powder,coriander powder & salt stir it for 2 min.
  • Add potato cubes into it & mix well.add 1 cup of water & cover it with a lid.let the gravy boil till the potato done or cooked properly.
  • Open the lid,cook it till all the water evaporate,sprinkle some garam masala & mix well.
  • Garnish with coriander leaves & serve hot.
