Cabbage curry(Bandha କୋବି ତରକାରୀ).....

Cabbage is known as bandha gobi or patta gobi, it is a very popular vegetable in India. Cabbage is light and crisp, it is prepared with different combinations, like with green peas, potatoes and its so delicious. The cabbage is usually finely shredded by hand then cooked either alone or with potatoes or green peas which are the most popular combinations..

INGREDIENTS:

  • Chopped Cabbage-3 cup.

  • Medium size potatoes-1(wash,peel & cut into cube shape)..

  • Mixed paste(1-onion,8-garlic cloves,1 piece of ginger,some cumin seeds,3-red chili)-3 tsp.

  • Tomato puree-2 tsp.

  • Chopped 

    Tomato-1.

  • Green peas-1/2 cup.(optional)

  • Red chili powder-1 tsp.

  • Sugar-1/6 tsp.

  • Mustard oil-3 tsp.

  • Garam masala-1 tsp.

  • Salt to taste.

For the seasoning:
  • Phutana(cumin seed+mustard seed+fenugreek seed)-1/2 tsp.
For garnishing:
  • Tomato flower & sliced green chili.

PREPARATION:


  • Fine slice the cabbage & rinse in the running tap water.Set aside in a colander/strainer,so that excess water drains off,add it into pressure cooker & add potato cubes,turmeric powder,salt & required water.Pressure cook it for 1 whistle.Remove all the pressure from pressure cooker & open the lid.
  • Heat a pan,Add 3 tsp mustard oil in pan,add sugar,add phutana.
  • When it start spluttering ,add mixed paste,red chili powder,sliced 

    Tomato

     stir for 1 min.
  • Then add tomato puree,stir until the raw smell of mixed paste go.
  • Add boiled cabbage ,mix well,cover the pan & cook on medium heat for 2-3 min. Don't add any water,cook until all the water evaporated & the spices coat evenly.
  •   Sprinkle some garam masala,mix it.turn off the flame.Garnish with tomato flower & sliced green chili.
  • "Cabbage curry" is ready to serve.Serve hot with steamed rice.
