Dahi baigana (ଦହି ବାଇଗଣ).....

"ଦହି ବାଇଗଣ"means Eggplant/Brinjal cooked in spiced curd, an excellent and aromatic dish from the Odisha cuisine. This dish is simple to cook and taste fantastic letting the vegetable to blend nicely in beaten spiced curd.This dish can be prepared without using onion & garlic,so it prepared during especially some auspicious festivals.Rolling on the floor

*Serves-2 person.


INGREDIENTS:

  • Eggplant/Brinjal-2.
  • Yogurt/Curd-2 cup.
  • Red chili-2.
  • Roasted Red chili-1 tsp.
  •  Mustard seeds-1/2 tsp.
  •  Curry leaves

    -5-10.

  • Refined oil-

    Oil to deep fry+

    1 tsp(for seasoning).
  • Sugar-1 tsp.(optional)
  • Salt to taste.

PREPARATION:


  • Cut the eggplant into thin slices.Marinate with salt & deep fry & keep aside.
  • Take a bowl,Mix yogurt gently with fried brinjal & salt.
  • Heat oil in a pan,add broken red chili,mustard seeds when it start spluttering,add 

    Curry leaves.stir it 1 min,switch off the flame.then add it to mixed yogurt.

  • Add roasted red chili powder,mix it.
  • "ଦହି ବାଇଗଣ"is ready to serve.serve hot with steamed rice...
