Kadai Bhendi.....

                                                                                                                                   

INGREDIENTS:

  • Bhendi/okra/ladies finger-15-20.

  • Chopped tomato-2(big size).

  • Capsicum-1.(*u can add color capsicum(red/yellow) for pleasant look)

  • Mixed paste(1-onion,8-garlic cloves,1 piece of ginger,some cumin seeds,3-red chili).-5 tsp.

  • Some coriander leaves.

  • Red chili powder-1 tsp.

  • Coriander powder-2 tsp.

  • Garam masala powder-1 tsp.

  • Green chili-2-4.

  • Cashew nuts-10-12(grind to paste).

  • cumin seed-1 tsp.

  • Turmeric powder-1 tsp.

  • Oil-5 tbsp.

  • Salt to taste.

PREPARATION:


  • Wash & clean the bhendi,cut it into big size pieces.

  • Heat 2 tsp oil in a pan,fry the bhendi to avoid stickiness without changing its beautiful green color & keep aside. 

  • Heat remaining oil in the same pan,add cumin seed,when it starts spluttering,add mixed paste,fry till the raw smell goes off.

  • Add chopped tomato with pinch of salt to make it soft faster. add turmeric powder,red chili powder,coriander powder mix well,fry till tomato gets mash up.

  • Then add cashew nut paste,saute till oil separate.add capsicum,fry it for 2-3 min in medium flame.

  • Add fried bhendi & salt into it,mix well,add 1/4 cup of water,cover it with a lid & allow it to boil 2-3 min in medium heat.

  • Open the lid,

    fry till water evaporate.finally add some coriander leaves to garnish.
  • "Kadai bhendi"is ready to serve.Open-mouthed smile.....Serve hot with  rice/roti of your choice..
