Kadai Bhendi.....
INGREDIENTS:
Bhendi/okra/ladies finger-15-20.
Chopped tomato-2(big size).
Capsicum-1.(*u can add color capsicum(red/yellow) for pleasant look)
Mixed paste(1-onion,8-garlic cloves,1 piece of ginger,some cumin seeds,3-red chili).-5 tsp.
Some coriander leaves.
Red chili powder-1 tsp.
Coriander powder-2 tsp.
Garam masala powder-1 tsp.
Green chili-2-4.
Cashew nuts-10-12(grind to paste).
cumin seed-1 tsp.
Turmeric powder-1 tsp.
Oil-5 tbsp.
Salt to taste.
PREPARATION:
Wash & clean the bhendi,cut it into big size pieces.
Heat 2 tsp oil in a pan,fry the bhendi to avoid stickiness without changing its beautiful green color & keep aside.
Heat remaining oil in the same pan,add cumin seed,when it starts spluttering,add mixed paste,fry till the raw smell goes off.
Add chopped tomato with pinch of salt to make it soft faster. add turmeric powder,red chili powder,coriander powder mix well,fry till tomato gets mash up.
Then add cashew nut paste,saute till oil separate.add capsicum,fry it for 2-3 min in medium flame.
Add fried bhendi & salt into it,mix well,add 1/4 cup of water,cover it with a lid & allow it to boil 2-3 min in medium heat.
Open the lid,
fry till water evaporate.finally add some coriander leaves to garnish.
- "Kadai bhendi"is ready to serve......Serve hot with rice/roti of your choice..
