Dalma is a unique and famous dish prepared in Odisha. I like it because it absolutely simple recipe of all the vegetables and dal with less spices.The more the variety of vegetables,the better the taste is enhanced.The important part of seasoning is using roasted dry chili & cumin powder.
INGREDIENTS:
Toor dal-1 cup.
Potato-1 medium size(wash,peel & cut into cube shape).
Pumpkin-50 gm.
Brinjal-1(cut into cube shape).
Tomato-2.
- french beans-1/2 cup.
- White radish-1
(cut into cube shape).
- Some chopped coriander leaves.
- Turmeric powder-1 tsp.
- Mustard oil-2 tsp.
- Broken red chili-2.
- Cumin seed-1 tsp.
- Bay leaves-1.
- Crushed ginger-1 tsp.
- Hing-small pinch.
- Salt to taste.
- Roasted chili & cumin powder-1 tsp each.
PREPARATION:
- Wash & Soak toor dal in water for 10-15 min.Drain water,add it into pressure cooker & add all the veggies,turmeric powder,salt,bay leaves & required water.Pressure cook it for 2 whistle.Let it cool for few min.
- Heat oil in a pan,add broken red chili,cumin seeds when it start spluttering,add crushed ginger & hing,stir it 1 min,then add cooked dal,stir it,switch off the flame.
- Add roasted cumin & red chili powder,mix it.Garnish with chopped coriander leaves.
- "ହରଡ ଡାଲମା" is ready to serve.serve hot with steamed rice/roti/parathas.
